{"id":63,"date":"2006-11-12T15:10:00","date_gmt":"2006-11-12T15:10:00","guid":{"rendered":"http:\/\/www.sheetudeep.com\/blogs\/?p=63"},"modified":"2010-03-23T22:22:42","modified_gmt":"2010-03-23T22:22:42","slug":"chicken-in-thai-green-curry","status":"publish","type":"post","link":"http:\/\/www.sheetudeep.com\/blog\/lifestyle\/recipes\/chicken-in-thai-green-curry\/","title":{"rendered":"Chicken in Thai green curry"},"content":{"rendered":"<p>600 gm chicken, boneless, 1 inch pieces<br \/>\n2 tbsp oil<br \/>\n3 cups chicken stock<br \/>\nSalt to taste<br \/>\n3-4 Kaffir lime leaves<br \/>\n\u00c2\u00be cup fresh coconut milk, thick<br \/>\n6-8 basil leaves, hand torn<br \/>\n2 fresh red chillies, sliced diagonally<br \/>\nFor green curry paste<br \/>\n4-5 green chillies<br \/>\n3 small onions<br \/>\n6-8 cloves garlic<br \/>\n1 inch piece galangal<br \/>\n2 stalks lemon grass<br \/>\n3 tbsp coriander roots, chopped<br \/>\n2 tsp coriander seeds<br \/>\n2 tsp cumin seeds<br \/>\n\u00c2\u00bc tsp lemon rind<br \/>\n1 tbsp lemon juice<br \/>\n6-8 basil leaves<br \/>\n1\u00c2\u00bd tbsp fish sauce (Nampla)<\/p>\n<p>For the green curry paste grind together green chillies, small onions, garlic, galangal, lemon grass, coriander roots, coriander seeds, cumin seeds, lemon rind, lemon juice, basil leaves, fish sauce and little water to a fine paste.<br \/>\nHeat oil in a pan. Add the ground paste and saut\u00c3\u00a9 for three to four minutes. Add chicken pieces. Mix and saut\u00c3\u00a9 for three to four minutes.<br \/>\nAdd stock and bring to a boil.  Add salt, hand torn lime leaves and cook for nearly 10 minutes.<br \/>\nAdd coconut milk and bring to a boil.
