{"id":40,"date":"2006-06-10T15:49:00","date_gmt":"2006-06-10T15:49:00","guid":{"rendered":"http:\/\/www.sheetudeep.com\/blogs\/?p=40"},"modified":"2010-03-24T17:47:10","modified_gmt":"2010-03-24T17:47:10","slug":"pyaz-ki-kachori-rajasthani","status":"publish","type":"post","link":"http:\/\/www.sheetudeep.com\/blog\/lifestyle\/recipes\/pyaz-ki-kachori-rajasthani\/","title":{"rendered":"Pyaz Ki Kachori (Rajasthani)"},"content":{"rendered":"<p><span style=\"font-family: arial;font-family:Arial,Helvetica,sans-serif;font-size:100%;\"  ><strong><\/strong><strong>For the                    dough<\/strong><br \/>\n2 cups maida<br \/>\n1\/4 cup                    melted ghee<br \/>\n1\/2 tsp salt<\/p>\n<p><strong>For                    filling<\/strong><br \/>\n2 cups onions (finely chopped)<br \/>\n1 tsp                    kalonji<br \/>\n2 tsp saunf<br \/>\n2 bay leaves<br \/>\n1 1\/2 tsp green                    chillies (finely chopped)<br \/>\n2 tbsp besan<br \/>\n2 tsp coriander                    powder<br \/>\n2 tsp chilli powder<br \/>\n1 tsp garam masala<br \/>\n3 tbsp                    coriander (chopped)<br \/>\n2 tbsp oil<br \/>\nSalt to                    taste<\/p>\n<p><strong>For the dough:<\/strong><br \/>\nCombine all                    ingredients in a bowl and knead into semi-soft dough using                    enough water. Knead well and keep covered under a wet muslin                    cloth.<\/span>                   <\/p>\n<p style=\"font-family: arial;\"><span style=\";font-size:100%;\" ><strong>For the filling:<\/strong><br \/>\nHeat oil in a pan.                    Add kalonji, saunf, bay leaves, green chillies and onions and                    saut\u00c3\u00a9 till the onions turn light brown.<br \/>\nAdd besan,                    coriander powder, chilli powder, garam masala and salt, and                    saut\u00c3\u00a9 for 3 minutes.<br \/>\nAdd chopped coriander and mix                    well. Discard the bay leaves. Allow mixture to                    cool.<br \/>\nDivide into 12 equal portions and set                    aside.<br \/>\nRoll out each portion of dough into a 2\u00e2\u20ac\u009d                    diameter circle. Place one portion of the filling in the                    centre. Surround filling with dough by slowly stretching it on                    all sides, over the filling, like in a potli.<br \/>\nSeal the                    ends tightly and remove excess dough.<\/p>\n<p>Roll out each                    filled portion into a 21\/2\u00e2\u20ac\u009d diameter circle, taking care to                    ensure that filling doesn\u00e2\u20ac\u2122t ooze out. Gently press centre of                    kachori with thumb. Repeat with remaining                    portions.<br \/>\nDeep fry kachoris in hot oil over slow flame                    till golden brown. The kachoris should puff up like puris.
